However, I think there might be downsides to each of these. I think the fruit would have a high probability of sticking to the foil (which is why we are lining the metal pan to begin with), and it might actually cook it at a hotter temperature than the plastic wrap, as it's a conductor, rather than insulator. One question though, the lowest my oven goes is 170 F and I think it heats a little hotter than that, that being said do you think it would be ok to line the pan with foil or parchment paper and in the end move the fruit to a plastic wrap for storage?
